Uncle A’s Eggs in Purgatory!

Eggs in Purgatory recipe:

Ingredients:
- 2.5 cups of your favorite or homemade tomato sauce and six meatballs. Leftovers are the best!
- 1 tablespoon olive oil
- 1/2 teaspoon red pepper flakes (adjust to taste)
- Salt and pepper to taste
- 4-6 eggs
- Fresh basil or parsley for garnish
- Grated Parmesan cheese

Instructions:
1. Pour the tomato sauce in a pan and add meatballs and a tbsp of olive oil and stir together. Season with salt, pepper and chili 🌶️ flakes and let it simmer for 10-15 minutes.
3. Create small holes in the tomato sauce and crack eggs into each well. Cover the skillet and cook until eggs are done to your liking.
4. Garnish with fresh basil or parsley and sprinkle with grated Parmesan cheese.
5. Serve immediately, scooping eggs with the flavorful tomato sauce.
