Uncle A’s Asian Sticky Chicken

Ingredients:
1. 4 chicken thighs (I use skin and bone in, but you can use boneless, skinless if you’re boring!)
2. Salt and pepper
Uncle A’s Asian Glaze:
3. 1/4 cup water
4. 3 tbsp honey
5. 1.5 tbsp low sodium soy sauce
6. 1 tbsp hoisin sauce
7. 1 tsp Uncle A’s Asian Spice
8. 2 cloves garlic, minced
9. One fresh habanero pepper
Directions
- Lightly season the boneless chicken with salt
and pepper on both sides. - In a cast iron skillet, add 1 tsp oil and fry the chicken for about 5-6 minutes on one side, then another 5-6 minutes on the other side until golden and fully cooked-through. Remove and cover to keep warm.
- In the same pan, add one chopped habanero pepper. I keep the seeds in for heat. You don’t have to if you’re boring. Sauté for 2-3 minutes and then add in the water, honey, soy sauce, hoisin sauce, Uncle A’s Asian Spice, and minced garlic. Mix until smooth and simmer over medium-high heat for about 1-2 minutes until thickened and bubbly.
- Add the cooked chicken back into the pan. Baste the sauce all over the chicken until it’s fully coated in the sticky Uncle A’s Asian Glaze.
- Top with chopped scallions and serve over hot basmati rice!
